The Sahlstrom Conference Center (SCC) is the focal point for many groups on campus. It houses Brown Dining Room and Morsels, the two main units that make up UMC Dining Services. Brown Dining Room is located on the second floor and can accommodate 450 people. It also features collapsible walls that create four additional separate meeting rooms--A, B, C, and D. The area on the first floor just outside of Morsels serves as an informal dining and meeting area as well as an occasional performance area for campus activities.

SCC also houses several faculty offices and the training kitchens and the Epicurean Room, a restaurant lab, used in UMC's HRI program.

History
The Conference Center was completed in 1980. It replaced the old dining facility in Bede Hall (what is now Bede Ballroom). It is located on the former site of Stephens Hall, a men's dormitory for the NWSA.

For years the building was known simply as the Conference Center, until 1997 when it was dedicated in honor of Dr. Stanley D. Sahlstrom, UMC's founding provost and former University Regent. 

In 1965 Sahlstrom was the founding provost of UMC, then a two-year technical college branch of the University. He left the provost's job in 1985 to become a member of the University of Minnesota Board of Regents, where he continued to be an advocate for UMC, supporting UMC's move to a four-year institution. He retired as a regent in 1997. 

During his career Sahlstrom was active in numerous educational associations on the national level, including Post International Network, North Central Association, Commission on Institutions of Higher Education, Rural Education Committee of the National Education Association and the National Association of Colleges and Teachers of Agriculture.

Brown Dining Room was named in honor of Myrtle "Ma Brown," who was the food service supervisor for both UMC and the NWSA from 1954-1970.
